Lamb with fried Bread
For this menu, you have to take a perfect cut of just above the leg of the Lamb, bread, fresh milk, salt and pepper to taste and some other ingredients as mentioned in the following descriptions.
Take the lamb and remove the moisture by using a paper towel. It is better if you can place cuts from each ends using a sharp knife. Then put some salt and pepper to the taste. Keep remember that lamb needs to have more pepper than you think to take a better taste. Pat the lamb properly and keep it aside till it perfectly seasoned for about 1 hour.
After seasoning take a nonstick pan and put some olive oil into it. Place the lamb and fry it well. You can see that the meat releasing the fat from it and fry it with a nice aroma. Put some garlic cloves to melt the fat of the meat and fry them together. Take the lamb out and keep it aside.
Then take some bread and cut it into pieces. Put them into a bowl and add fresh milk to it. Add pepper corn to that mixture and let it for some time until it dilute well. Take a nonstick pan and put some olive oil to it. Pan fry the bread pieces we call it now as croutons.
Now we will prepare the sauce. Take a mortar and fried garlic cloves, vinegar, mustard and olive oil. Chop some parsley leaves and crush and mix them all well.
Take a nice and clean plate and put some sauce to the middle. Place lamb on top of that and put croutons over it. Again put some sauce over it and nicely garnish it.
Now it is ready to serve.
Grilled Lamb chops with chopped mint
Take some lamb and clean it well. Keep it aside and prepare the seasoning base using salt, pepper, blundered coriander seeds, ginger garlic paste and olive oil. Pat lamb with this seasoning mixture. Keep it aside for seasoning.
Prepare a grill pan, put olive oil into it and fry both side of the lamb for about 15 minutes till all the fat drains out from meat. Keep aside the grilled lamb for resting.
Sauce is preparing with yoghurt and fresh chopped mint. You can add some lime to the mixture if you really want to have them. Mix them well. Broccoli is nicely matching with fried lamb and fry broccoli in a charcoal grill.
You can plate the fried lamb and put sauce over it. Nicely garnish it and serve to your loved once.
Rolled Lamb roast with olives.
Take breast of the lamb which is somewhat thin and tenderer without bones (Ribs). Season it using salt, pepper, oregano leaves, chili flakes, lemon zest and salted anchovies apply in both sides. Pat it well and keep it aside for 1 hour.
After seasoning, roll the lamb like a role and using barbeque threads tie it well. Keep it aside.
Take another pan and put olive oil into it. When it is becoming heated, add onion slices, garlic ginger paste, capers and black olive to the mixture. Put some cooking wine, tomato sauce, salt and pepper to the taste. Cook it well until it reduces some volume.
Place the lamb role into the pan and mix it with the sauce. Oven this dish under 172 F for 2 hours.
