Grilled Chicken with Apricot Jam and Molasses

In this recipe, you may need to have some special ingredients than normal barbequed chicken. They are some olive oil, garlic cloves, coriander, cumin, pomegranate juice, ginger, paprika, apricot jam, molasses and whole chicken about 10 pieces. First peel some ginger as well as mince some garlic cloves. Sieve the apricot jam into a cup and keep it aside. Clean the whole chicken and cut it into 10 pieces and keep it aside. Now all the preparations have done and let’s go step by step in this menu.

Take a nonstick pan and put some olive oil into it. Add garlic cloves, spices and salt to taste to the mixture and cook it for one minute under medium heat. Stir it well and you can feel a nice aroma around your kitchen. Now add some pomegranate juice and boil it with the mixture. Add molasses and sieved apricot jam into the mixture when after switching off the gas in the cooker. Stir the mixture well and melted mixture will be there for next steps. Let it come to normal temperature and it will be somewhat thicker when cooling. Take this thicken mixture and put it into a small bowl for serving.

Take the chicken parts and add seasoning base with salt and pepper. Pat it well and let it season for 1 hour. Prepare a charcoal grill for cook this chicken under medium heat. Grill this pieces well for about 5 minutes and all the sides should grill till it becomes brownish color. While turning brush some sauce on it. After it cooking well take it out from the grill and let it for rest for some time.

Take a cleaned plate and place this chicken pieces nicely and put the prepared sauce on top of them with an art. You can feel this grilled chicken taste is somewhat different since this includes apricot jam and molasses. Feel the taste. Garnish this with fresh parsley and have this with a cold beer.
